Polpette di carne in salsa di pomodoro
I like when you grill meat on an outside BBQ – or when you have a roast piece that was cooked forever – but at home it’s not really possible to do so.
For these reasons (plus others that I will avoid to list and ended up starting a never-ending conversation about “mangiare sostenibile” = sustainable eating), I’m not a crazy meat fan and I don’t eat it very often either but, tonight, I was craving some!!!
(for 10 medium size meatballs)
350 gr Minced Meat
3 tablespoons of Fresh Ricotta cheese
Salt & Pepper
A few pinches of Flour
1 can of Chopped tomatoes – if you have a tomato sauce with onion and garlic soffritto already made you can use it and the sauce will be more tasty (or you can make it)!
Some herbs like Sage and/or Rosemary
(Plan a side dish: normal salad, fresh veggies… anything! I had some steamed carrots and courgettes).
Place your meat, egg, salt, pepper and the 3 spoons of ricotta in a bowl and mix it together.
When all the ingredients are well mixed you can start preparing your meatballs and roll them on a “flour bed” to make them less sticky!
Let the meatballs cook in a frying pan with some olive oil and turn them only after they have created a thin crust on one side (if you turn them before that they might lose their shape completely…).
You can add the chopped tomato – or the tomato sauce – with the herbs and let everything cook longer.
Cover it: it will avoid making your kitchen look like a splatter movie and you will also make sure that the meat will be cooked!
Taking photos of real meat can be very difficult, so this is what my dinner looked like!
I had a guest over for dinner: she asked for a bis…and a tris… my meatballs definitely tasted nicer than what they look in this photo!
