Tomato, Lentil & Lime Soup

Summer is lazy and is taking its time to arrive – June is giving us some more days of Winter – so I have the chance to cook this very nice tomato soup one more time! (Yuppie!!!)

I found this recipe on the internet this Winter and I really loved it!

I can’t remember where I’ve found it so I will put my version, which should be very similar to the original because it was already perfect!

Ingredients:

(serves 2)

1 Onion

1 Big Carrot

300 ml Vegetable Broth

1 can of Chopped Tomato – 400 gr

1 Lime

Salt

Olive Oil

1 pinch of Thyme

1 pinch of Cumin seeds

3 Tablespoons of Orange Lentils

Chop your onion and carrot in small pieces and let everything soften in a pot with some olive oil and a pinch of cumin.

Add 3 tablespoons of lentils and let them cook for 1 or 2 minutes before adding the chopped tomato and broth.

Make it easy: add a stock cube and some hot water instead of adding broth, it’s exactly the same!

Let it cook for 15-20 minutes.

Mix it all into a cream, add some lime juice and decorate with lime zest and thyme!

It’s nice even if it is not too warm, the lime gives to the soup a kind of fresh taste
