Cabbage, Honey and Mustard Autumn Salad

I usually eat salads in Summer time, they are fresh and light so I immediately associate them with sunny days when you don’t feel like eating a lot and you want to have a quick lunch.

But why not have an Autumn salad as well?! It just has to be a bit more “substantial” and maybe have a dressing to make it even more tasty!

Ingredients:

For the salad:

White cabbage

Sunflower seeds

Raisins

Cumin Seeds

Apples

Salt and Olive oil

For the dressing:

Honey

Mustard

Slice the cabbage very thin, peel the apple and slice it thin as well (if you prepare the salad in advance add a bit of lemon juice to stop your apple from turning dark).

Sprinkle the sunflower seeds, the cumin seeds and a fist of raisins to your salad.

Add salt and olive oil.

Prepare the honey and mustard dressing by mixing a spoon of honey with a spoon of mustard. I usually put the same quantity of each – more or less – but you might vary it depending on your own taste!

Pour your dressing on top of your Autumn salad and enjoy it!
