Roasted Vegetables

I really like roasted vegetables, any kind of vegetables mix, but I always forget about it and I end up cooking something else, or just making a salad as a side dish! Roasted vegetable is the easiest thing you can cook! Choose your vegetable mix and cut the vegetables and stick them in the oven.

I decided to use sweet potatoes, cherry tomatoes, broccoli, mushrooms and spring onions!

I cut all the vegetables in big pieces – they will get very small while they cook – sprinkling them with thyme, salt, olive oil and I used all the spring onion including the green bits!

If you want to keep the vegetables  more moist, you can cover them with aluminum foil, which will stop them from getting very dry!

You can eat the roasted veggies as a side dish for fish and meat (or I have to confess I’m a bad, bad, bad Italian, pasta with vegetables on the side!!!). I had mine with my ricotta and spinach “mezze lune”!
