Rhubarb and Almond Tart

Also ‘kindly’ nicknamed by my Mum: pizza with würstel!

YEP! You got it right my adorable mamma- who cooks way better than me – when I texted her the photos of this cake, decided that it looked like a pizza topped with würstel and there was no way to make her change her mind!

I used rhubarb but if you want to avoid ‘the würstel effect’ that you can easily swap it with strawberries, raspberries, blueberries or any other fruit that you might like – or have at home!The recipe is so easy that anyone can prepare it quickly and without fear.


A roll of ready sweet pastry for cakes

400 gr Rhubarb – or other fruits

100 ml Rose, Strawberry or Raspberry syrup (or a spoon of sugar if you don’t have it)

1 Egg

50 gr Sugar

50 gr Almond powder

100 ml Double cream

Icing Sugar and sliced Almonds to decorate

Basically it’s so easy that I don’t know where to start but I guess you can just mix all the ingredients inside a bowl except for the fruit and the syrup which you will have to cook for a few minutes on a lower heat.


You can decide – depending of which fruits are you using – to cook them for more or less time and to cut them into smaller or bigger pieces.

Lay the pastry on a baking tray, pour the mix and gently, with the help of a spoon, place the fruits at the end.

Does it look like a pizza with wurstel???

Decorate with almond slices and cook for 30-40 mins at 180°C.

When the cake has cooled down you could also sprinkle it with icing sugar before serving.
